When I worked at Harmelin, we had a bridal shower for Lisa. Nicole put together the cutest favors. They were personalized recipe books - we all submitted one of our favorite recipes and it was a cute gift idea and a easy way for us all to swap recipes. Win, win.
With Thanksgiving next week, I decided to post Nicole's mac & cheese recipe for a different spin on one of the holiday's favorites for Food Fridays.
Ingredients:
1 tablespoon vegetable oil
1 pound elbow macaroni
8 tablespoons (1 stick) plus another tablespoon butter (a total of 9 tbs)
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded Monteray Jack
1 cup (8 ounces) Velveeta, cut into small cubes
2 cups half and half
2 large eggs, lightly beaten
Directions:
Boil water - add macaroni noodles and oil.
Once macaroni is done (7 to 10 minutes), remove and place in a casserole dish.
Add butter, half and half, and eggs. Mix well.
Add a little of each cheese at a time and mix until macaroni is covered.
Sprinkle the top of the noodles with the extra cheese and cook at 350 for 20-30 minutes until top starts to brown.
And here is the bridal shower favor. Cute, right?!
